Chocolate Oatmeal No Bake Cookies

Good Tuesday afternoon!

Sorry for the delay. This will be a very short post with the obligatory Tuesday recipe and some pics. I'll be back on schedule tomorrow.

Mike, Grandmother and I went to the Top 20 Luncheon today for Josh. It was wonderful seeing all the kids who had worked so hard for this award being honored. And it is exciting to know this chapter of their life is almost finished. (Only 23 days until graduation.)

There he is! A chip off the old block. His Mother's block... not his Dad's.

Josh, Alex and Lauren.

I have a Freshman copy of this picture. I have a Sophomore copy of this picture. I have a Junior copy of this picture. And now I can finish my collection with the Senior copy.

It was hard seeing all the guys on the back row... so I made the girls go away. (Do not tell Roxie and friends. They would not understand the concept of "making the girls go away." It is completely foreign to them.)

I'll have a few more photos tomorrow, but we simply must move on to the recipe. We simply must!

Chocolate Oatmeal No Bake Cookies

As soon as I finish posting, I am walking into the kitchen and mixing up a batch of these cookies from my childhood. I saw the recipe on Pinterest, and although my MamMa and Mother made these a lot when I was growing up, I have never made them myself. And I cannot imagine why.

You will need the following:

1/2 cup butter
2 cups sugar
1/2 cup milk
4 tablespoons cocoa
1/2 cup peanut butter
3 to 3 1/2 cups cooking oats
2 teaspoons vanilla

1. Add the first 4 ingredients in a saucepan. Bring to a rolling boil, and boil for 1 minute.

2. Stir in the next 3 ingredients and drop onto wax paper.

3. Let cool until set.

These are delicious, and I'm sure you have almost all of the ingredients already in the house. (If you need some cooking oats, give me a call. I'll bring them right over!)

Have a great Tuesday evening. I'll be back tomorrow with Wednesday Wisdom, Randomness, a Seasonal Tradition and more pics.

Take care, and I'll talk to you in the morning.

Sincerely,

The Enchanting Belinda

    1. Yes. Seth and Alex have had an unbelievable year. I know y'all are so proud of them.

And as far as the cookies go, they are perfect. Peanut butter, chocolate, sugar... and the rest of the stuff. It doesn't get any better, does it?
