Weekend Wrap-Up, Mississippi Roast, Quotable Quotes, Birmingham Dates, Father/Daughter Banquet Date, Blog Linkage

Good Tuesday morning!

RANDOMNESS #1 - Mike and Roxie went on their annual Father/Daughter Date this past weekend. When Roxie became too old to attend the Father/Daughter Banquet at church, she and Mike decided to continue the tradition on their own... forever.

Roxie is a lover of steaks, so she and Mikie get dolled up and go to a different restaurant every year in search of the world's best steak.

I, personally, am not a steak lover. I am a pork/chicken/fish/ground chuck kind of gal.

The above fact has nothing to do with their outing. I just have to make everything about me... just a little.

I hope they continue to go on this date when Roxie is married with three kids of her own. It's a sweet, sweet tradition.

Mikie has been such a good Daddy to Austin, Josh and Roxie.

I knew he would be.

RANDOMNESS #2 - I wrote the following "ode" to exercise two years ago. As you all know by now, I am riding a bike as my present form of exercise. (I rode 10.04 miles yesterday.)

And right now, I like it.

Two weeks and three days from now, probably not so much!

Exercise Terms Every 50 Year-old Should Avoid

I've been very sore the past two weeks. More sore than usual. My exercise buddy, Cam, and I have been SUPER consistent these last two weeks, which I'm sure explains the extra soreness in unusual muscle groups in my body.

During my much-needed rest time (post workout), I came up with a list of Five Words and/or Phrases 50 Year-Old Women HATE, and I want to share them with you today.

1. Squat - Whoever invented this exercise should be shot. No trial. No jury. Just shot. And I know the 50 year-old chick who can do it, too!

2. Lunge - When you have toddlers in your life, lunging is a very normal, natural part of your day. You "lunge" as your three year-old starts running in a parking lot. You "lunge" when you see your one year-old putting something foreign in their mouth while sitting across the room. You "lunge" to answer the phone during nap time so the incessant ringing doesn't wake up the baby you just rocked to sleep.

Lunging in your 20s and 30s is not a big deal. It's what you do.

Lunging in your 50s is unnatural. It is unnecessary. It is a waste of precious resources.

Whoever invented this exercise should be shot. No trial. No jury. Just shot. And I know the 50 year-old chick who can do it, too!

3. Feel the burn! - If one more 20-something instructor asks me, "Can you feel the burn?" or says, "You should be feeling the burn now if you're doing the exercise correctly," I may mentally lose it.

In my mind if I feel something on my body burning, I should be stopping, dropping and maybe rolling.

4. Planking - Planking is a new exercise position invented by Satan himself. It's sole purpose is to strengthen the ab muscle group and build stamina.

I have no use for abs OR stamina in this stage of life.

5. You can do it! - This phrase is extremely irritating. It is the same phrase I used over and over and over when my three kids were learning to walk.

I am now convinced they finally did take their first respective steps just to shut me up.

I know that is why I push myself to finish the last "working track" of Body Pump. I just want to shut someone up!

I feel better now. Not less sore... but better!

I believe this to be true!

Mississippi Roast

I posted this before, but it is so good AND easy, it deserves a second post.

You will need the following:

Chuck roast
1 package Hidden Valley Ranch Dressing
1 package McCormick Au Jus mix
1 stick of butter
5 pepperoncini peppers

1. Put a chuck roast in the crock pot.

2. Sprinkle Hidden Valley Ranch Dressing on top.

3. Sprinkle McCormick Au Jus mix on top.

4. Put a stick of butter on top.

5. Place 5 pepperoncini peppers on top.

6. Do NOT add water.

7. Cook in crock pot on low for 8 hours.

This is a good roast, People!

Birmingham Dates

I saw this list on Facebook this morning...

And since it was a list, and we all know I love lists...

And since I haven't done EVERYTHING on the list...

I decided to put it into "date" form for everyone who might read A Simple Life today.

1. Attend a baseball game at Regions Field. (I haven't been to the new field yet, and I'm putting it on my "To Do This Spring" list as we speak.

2. Enjoy a sunny day at Railroad Park. (I have enjoyed Railroad Park.)

3. Get some local coffee at Urban Standard. (It is located on 2nd Avenue North. Rumor has it they serve great sandwiches AND cupcakes. If I don't try it for the coffee, I may very well try it for the cupcakes!)

4. Enjoy coffee and catch up on your reading at Church Street and Books. (Melia told me about this place. They sell the amazing Breakup Cookie. It is worth the trip!)

5. Explore the treasures at What's on 2nd. (It is located at 2306 2nd Avenue North in Birmingham. It is an antique store, a collectibles store and a video game store. What can I say? It sounds like it has something for everyone.)

6. Breakfast at Bogue's. (It may not be Original Pancake House, but I'll try anything once!)

7. Attend a concert at Iron City. (Mike and I have been to a Silent Auction at Iron City and it is a very cool venue. Roxie and some friends are going to a concert at Iron City in the next few weeks, and I'm pretty sure she's going to like it, too.)

8. Go hiking at Ruffner Mountain Park. (Mikie and I SO need to do this.)

9. Zipline at Red Mountain Park.

10. Cool down with some Doodles. (Sadly, I have never heard of Doodles. They make homemade Italian ice and sorbet. It is located in Cahaba Heights, and I feel like I may be visiting this establishment with a "date" sooner than later.)

Have a glorious Spring-like week. I'll be back Friday with Weekend Happenings, a new-to-me Restaurant Review and more.

Take care, and I'll talk to you the end of the week.

Sincerely,

The Enchanting Belinda

P.S. Here are a few of my favorite pics/memories from March 2012.

Roxie participating in BLAST in 2012.

Josh throwing his sister into the ceiling.

Good times.

Good times.

Austin had his first emergency surgery in March of 2012. They took out his appendix...

And gave him some very good drugs.

Brad turned 21 years-old with Josh and Katie's help.

We spent a long weekend at the Weston in Huntsville. We saw Catching Fire (the first one) at the Monaco and had a really good time.

  1. So how big is the 'chuck' in the chuck roast? 3 lbs., 4 lbs., 2 lbs., 5 lbs. I want to chuck the roast into my crock pot but size is important to me. Thanks... in the meantime my mouth waters in anticipation.

    Signed hungry on Wednesday morning.

    1. So sorry. The recipe didn't specify a size, and I didn't either. The first time I cooked it, I used a 3 pound. This past Sunday, I used a 4.

The other ingredients stayed exactly the same!
