Good Friday evening!
RANDOMNESS #1 - Courtney's birthday was September 14. Roxie's birthday was September 25. Josh's birthday was October 4.
We would have had separate celebrations, but we are a little scattered these days, and between Gardendale, Hartselle and Auburn, we picked a day kinda in the middle and did a COMBO Celebration!
We went with a Fall Birthday Party Theme...
As per Roxie's request/demand.
Everyone (Josh, Courtney and Roxie) took turns opening gifts and cards...
Just like Christmas.
Roxie went retro.
I had this exact same record player when I was young except it came in brown.
Just brown.
Only brown.

Josh's Pumpkin Spice Trifle (see recipe below).
Roxie's Caramel Apple Trifle.
Courtney's Cookies and Cream Trifle.
I made each person an individual trifle because three cakes seemed too, too much.
Turns out...
Three trifles could also be described as too, too much!
All three were supposed to blow out their candles at the same time...
But Josh likes to have his own moment in the spotlight.

She IS a true Autumnal Nut...
And that makes me happy.
Pumpkin Spice Trifle
You will need the following:
1 box spice cake mix
Ingredients listed on box to prepare cake
1 package (8 ounces) cream cheese, softened
1 cup canned pumpkin
1/2 cup sugar
1/2 teaspoon pumpkin pie spice
2 tubs (8 ounces each) whipped topping, thawed
1. Prepare and bake cake according to instructions on the box. Allow to cool completely.
2. Once the cake has cooled, crumble it into a large bowl. Set aside.
3. In a large mixing bowl, beat the cream cheese, pumpkin, sugar and pumpkin spice with an electric mixer until thoroughly combined.
4. Gently stir in one tub of whipped topping. Set aside.
5. In a trifle bowl, layer one-fourth of the cake crumbs. Top with half of the pumpkin cheesecake mixture. Add another cake crumb layer. Top with the remaining tub of whipped topping. Add more cake crumbs. Top with the remaining pumpkin cheesecake mixture. Add the remaining cake crumbs.
6. Serve immediately or refrigerate until serving time. Refrigerate any leftovers.
7. Serves 24.
NOTE - That's the part I didn't read before preparing THREE trifles. They each serve 24...
Which equals 72 servings.
We had a total of 20 guests...
And Judith and Sawyer didn't hold up their end of the "trifle eating bargain."
